This test uses brewSTAT Rapid PCR for detection of Saccharomyces Cerevisiae var Diastaticus STA1 gene (glucoamylase gene) via PCR in wort or beer.
Yeast strains with the STA1 gene excrete glucoamylase enzyme from within the cell wall causing non-fermentable sugars in beer to be broken down into fermentable sugars. Yeast can then consume those sugars causing over-attenuation and over-carbonation of beer.
Results are usually given within 24 hours after the sample arrives at the lab.
This is a qualititative test. Result will yield one of three possibilities: Negative, Low Level Positive, or High Level Positive.
